BAKEHOUSE BELLAGHY GUINNESS BREAD

Enjoy a thick wedge of this bread, thickly buttered as a perfect accompaniment to a bowl of soup.

INGREDIENTS 

250g wholemeal flour
100g self-raising flour
75g porridge oats and an extra handful for the top
50g dark brown soft sugar
2 tsp bicarbonate of soda
1 tsp baking powder
50g melted butter
1 tsp vanilla extract
230ml buttermilk & 330ml Guinness beer

METHOD

Grease and line a 2 pound loaf tin with parchment paper or non-stick loaf tin liner and reheat the oven to 220*C (200*C fan).
Place all the dry ingredients into a large bowl including the oats, flours, sugar, bicarbonate of soda, baking powder and salt. Stir well to combine.
In another large bowl mix together the melted butter, vanilla, buttermilk and Guinness. The butter will start to solidify in small lumps but this is fine.
Pour the dry ingredients into the wet ingredients and mix well until all the flour is combined into the liquid.
Pour the mixture into the prepared baking tin and scatter a handful of oats on top.
Bake for approximately 45 mins – 1 hour.
