This Irish, foccacia style bread is easy to make, quick to cook and is a fantastic base for many delicious other flavours. Serve warm, with friends, antipasti and Italian wine.

INGREDIENTS 

450g soda bread
2 tbsp parmesan cheese
400ml buttermilk
1 small red onion, thinnly sliced
1 tbsp chopped rosemary or kept in sprigs
1 tsp sea salt
2 tbsp olive oil

METHOD

Grease and line a small baking tin (approx 9″ x 12″) with baking parchment and preheat the oven to 220*C (fan 200*C).
Place the flour into a large bowl and grate in the parmesan and stir well to combine.
Make a well in the centre of the flour and cheese mix and pour all the buttermilk in, mixing with a round bladed knife to a soft dough.
Using your hands, lightly bring the dough together. This will be quite a sticky dough and won’t need much handling. Transfer it into the prepared baking tin.
Using your fingers push the dough into the corners of the tin and make indentations all over the dough.
Drizzle the oil over the dough and scatter on the red onion, rosemary and sea salt, pushing the onion slightly into the dough. Sundried tomatoes and olives also make a delicious addition.
Bake in the oven for approximately 25 mins until risen and golden brown.
