FANTASTIC FADGE

Fadge is a delicious local potato bread recipe, traditionally made with left over potatoes and served warm as part of a traditional Ulster fry.

INGREDIENTS 

500g cooked, mashed potatoes (ideally still warm) use a dry potato such as Maris piper, King Edward or Queens
60g butter
120g self-raising flour
Salt and Pepper to taste

METHOD

Place the warm, mashed potatoes into a large bowl and mash the butter into them.
Add the flour and seasoning into the potatoes and combine well with a round bladed knife.
Bring the mixture gently into a soft dough with your hands.
Turn the dough out onto a lightly floured surface and roll out to no more than 1cm thick.
Cut the dough into 4 traditional farls, by cutting a cross into the centre of the dough.
Children will enjoy using novelty cookie cutters to create fun shapes with the potato bread.
Dust a non-stick frying pain or griddle with flour and cook the fadge over a medium heat for approximately 5 mins on each side until the fadge turns golden brown. Serve warm with butter.
